Some people believe a sushi chef’s job is to be “talkative”—to entertain with stories while slicing fish. But at the heart of the Shokunin spirit, there is a much deeper, more active verb: Kiku (聴く) — To Listen.

In my class, I don’t just “hear” my guests; I listen to discover the rhythm of their journey. This is not about passive observation; it is about finding the frequency where our stories align.

The A Cappella of the Soul

A few days after her sushi class in Tokyo, I met Lindsay and her friends again, this time in a hidden karaoke bar in Kyoto. As the music began, we discovered a shared secret: both of us had deep roots in a cappella singing.

In a cappella, you cannot create a beautiful chord by simply singing loudly. You must listen to the other person’s melody line more intently than your own. As Lindsay and I sang together, we were constantly adjusting, feeling the vibrations, and leaning into each other’s notes.

This beautiful moment in Kyoto didn’t happen by chance. It happened because, during our sushi class in Tokyo, I chose to Kiku. By truly hearing her excitement for Kyoto, I opened a door. That “listening” at the counter became the “harmony” in the karaoke bar. We weren’t just a guide and a tourist anymore; we were two voices creating a single, beautiful memory.

This connection began at the kitchen studio, where Lindsay and her friends were fully immersed in the joy of creation.
